Instructions

Add the tomato wedges, cucumber, red onion, and bell pepper (if using) to a large serving bowl.

Scatter the Kalamata olives over the top.

In a small bowl, whisk together the olive oil, red wine vinegar, oregano, and a pinch of salt and pepper.

Pour the dressing over the vegetables and toss gently to coat.

Lay the block of feta on top (or scatter cubes), add a final drizzle of olive oil and a pinch more oregano, and serve right away.
