Hummus Toast with Tomatoes, Olives and Feta

Toss the halved tomatoes with the olive oil, lemon juice, and a pinch of salt, and leave them to sit while you do everything else. They will release a little juice, which is the point.

Toast the bread until it is well browned and firm.

Spread the hummus thickly over each slice, right to the edges.

Spoon the tomatoes and their juices over the hummus, then add the olives and crumbled feta.

Finish with dill and black pepper, and eat right away while the toast is still crisp.
